Ingredients

Apple Crisp Filling
  • 6 cups Honeycrisp apples about 6 medium, peeled and sliced into ½″ wedges
  • 2 tsp fresh lemon juice
  • 1 ½ tsp vanilla extract
  • ¼ cup 50g granulated sugar
  • ¼ cup 50g light brown sugar, packed
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • tsp ground nutmeg
  • tsp ground cloves
Apple Crisp Topping
  • 2 cups 200g old-fashioned rolled oats (certified gluten-free if needed)
  • 1 cup 100g almond flour
  • ¾ cup 150g light brown sugar, packed
  • ½ tsp kosher salt
  • 1 tsp ground cinnamon
  • ¾ cup 170g unsalted butter, cold and cubed (regular or plant-based)

Method

  1. Prepare the Apples – Place sliced apples in the slow cooker. Add lemon juice, vanilla, granulated sugar, brown sugar, cornstarch, and spices. Stir until apples are evenly coated.
  2. Cook the Filling – Cover and cook apples on HIGH for 1 ½–2 hours (or LOW for 3 hours) until they begin to soften and release juices.
  3. Make the Topping – While apples are cooking, mix oats, almond flour, brown sugar, salt, and cinnamon in a medium bowl. Cut in cold butter with a pastry cutter or fork until crumbly.
  4. Add the Topping – Sprinkle the oat mixture evenly over the partially cooked apples in the slow cooker.
  5. Finish Cooking – Cover again and cook for another 1 ½ hours on HIGH (or 3 hours on LOW), until apples are tender and the topping is golden and crisp.
  6. Serve – Scoop warm apple crisp into bowls and enjoy with vanilla ice cream, whipped cream, or caramel sauce.

Notes

  • Timing Tip: Adding the topping halfway ensures it stays crisp instead of soggy.
  • Crisp Topping Hack: Place a thick paper towel (or clean kitchen towel) directly under the slow cooker lid while the topping cooks. This absorbs excess steam so the oat topping stays crunchy.
  • Apple Varieties: Honeycrisp is ideal, but Granny Smith, Pink Lady, or Fuji also work well.
  • Storage: Store leftovers in an airtight container in the fridge for 3–4 days. Freeze up to 3 months. For easy portions, freeze in ice cube trays and transfer to freezer bags.
