Prep the pork: Place pork, onion, peppers, seasonings, and olive oil in a slow cooker.
Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the pork is tender.
Shred: Remove pork, shred with two forks, and return to the juices to keep it moist and flavorful.
Melt the cheese: Place buttered rolls in a toaster oven (or regular oven) with cheese on the cut sides. Toast until the cheese is melted and the rolls are lightly golden.
Assemble the sandwiches: Spread a thin layer of pesto on each roll, pile on the jerk pork, and close the sandwich.
