Jerk Pork Grilled Cheese Sandwiches

Ingredients
  

  • 2 lbs pork loin
  • 1 onion sliced
  • 1 bell pepper sliced
  • 2 tbsp jerk seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp orange pepper seasoning
  • 8 –12 slices bread
  • 8 –12 slices cheese Muenster, Monterey Jack, or Pepper Jack
  • Butter for grilling
  • Optional: pesto

Method
 

  1. Prep the pork: Place pork, onion, peppers, seasonings, and olive oil in a slow cooker.
  2. Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the pork is tender.
  3. Shred: Remove pork, shred with two forks, and return to the juices to keep it moist and flavorful.
  4. Melt the cheese: Place buttered rolls in a toaster oven (or regular oven) with cheese on the cut sides. Toast until the cheese is melted and the rolls are lightly golden.
  5. Assemble the sandwiches: Spread a thin layer of pesto on each roll, pile on the jerk pork, and close the sandwich.
  6. Serve: Enjoy hot, ideally with crock pot tomato soup for dipping.

Notes

  • Seasonings are flexible: The onion powder, garlic powder, jerk seasoning, and orange pepper are a great starting point, but feel free to adjust the amounts to your taste. If you like it spicier, add extra jerk seasoning. For a milder flavor, go lighter on the orange pepper.
  • Bread options: I love using crusty rolls or sourdough for this sandwich, but brioche or your favorite sturdy bread works too.
  • Cheese swap: Muenster, Pepper Jack, or even sharp cheddar all melt beautifully with the jerk pork.
