Slow Cooker - Crock Pot Tomato Soup

Ingredients
  

  • 4 –5 medium fresh tomatoes or 2 cans, 14.5 oz each
  • 1 pint grape/cherry tomatoes
  • 1 onion diced
  • 2 –3 garlic cloves minced
  • 2 –3 mixed peppers chopped
  • 2 –3 tbsp olive oil
  • Salt and pepper to taste
  • Optional: 4 oz cream cheese or ½ cup heavy cream

Method
 

  1. Chop tomatoes, peppers, onion, and garlic.
  2. Add to crock pot with olive oil, broth, salt, and pepper. Stir.
  3. Cook on HIGH 3–4 hours or LOW 6–8 hours.
  4. Add cream cheese in the last 30 minutes.
  5. Blend until smooth with immersion blender.
  6. Adjust seasoning and serve hot with toppings or grilled cheese.

Notes

No broth needed!
  • Unlike many tomato soup recipes, this one doesn’t use broth. The slow cooking process pulls out all the juices from the tomatoes and peppers, creating its own rich base.
Flavor Variations:
  • Garlic & Onion Powder: Boosts the savory base of the soup.
  • Jerk Seasoning: Adds a spicy, Caribbean twist (pairs perfectly with the jerk pork grilled cheese).
  • Smoky Paprika: Gives the soup a warm, smoky depth.
