Method
- Chop tomatoes, peppers, onion, and garlic.
- Add to crock pot with olive oil, broth, salt, and pepper. Stir.
- Cook on HIGH 3–4 hours or LOW 6–8 hours.
- Add cream cheese in the last 30 minutes.
- Blend until smooth with immersion blender.
- Adjust seasoning and serve hot with toppings or grilled cheese.
Notes
No broth needed!
- Unlike many tomato soup recipes, this one doesn’t use broth. The slow cooking process pulls out all the juices from the tomatoes and peppers, creating its own rich base.
